how can this be C Major key?

This is the key of C major.

As far as I know, the chords that come from the key of C major are CM7 (Ionian), Dm7 (Dorian), Em7 (Phrygian), FM7 (Lydian), and G7 (Mixo-Lydian).

Should be Am7 (Aeolian), Bm7b5 (Locrian).

However, if you look at this score here, it is full of chords that are against the rules to the extent that it cannot be considered the key of C major. How can this happen? It looks full of dissonance, but it's really nice to hear it played.

Can you give me some advice on how a score full of out-of-key chords was created and what I should study?
