Why is an eighth note written differently in 6/8?

A bar of eighth in 3/4 are written as 3 groups, like this: ♫ ♫ ♫ . However, in 6/8 a bar of eighth notes is written in 2 triplets. Why is it written like that?
I know this a complete beginner question but I've been searching for ages and I cant find WHY eighth notes are written the way they are, all I can find is the difference in its sound.
