Learning audio engineering for more alternative music?

I make alternative music that isn't really mainstream but not really underground weird stuff but at the same time not very popular music. A lot of the productions I look up to are modern shoegaze, hardcore, alt bands that have been released in recent years. My trouble is that I want to recreate a lot of these productions I hear but when I try to learn about audio engineering, a lot of the teaching online is taught by old school classic rock or classic metal producers. The sounds I hear on my favorite albums sound other worldly but I have no clue how to even move in the right direction for that sound because nobody really teaches how to get those sounds.

I have watched countless drum recording videos, amp mic'ing videos, and general audio videos that are always by (with no disrespect or hate) middle aged guys who are trying to replicate bands like Metallica or ACDC. I feel like theres a lot of information avaliable online for audio production but its all geared towards EDM, Classic rock, and 80's metal.

Any thoughts are trying to learn recording methods that aren't being taught?
