Question about Demonstrate

I was playing commander the other day and got into a combo where I could infinitely loop [[Incarnation Technique]] (using Eternal Witness, Phyrexian Altar, and Izoni, Thousand-Eyed). I had infinite mana, creatures, and mill, so I could win in any number of ways, but one that we were unsure of was if I could mill everyone out with Incarnation Technique. However, one of my opponents had [[Worldspine Wurm]] in their deck.

This leads to two questions:

  1. Can an opponent choose to not copy a demonstrate spell, if I choose for them to?
  2. Do you have to choose a creature with Incarnation Technique or could my opponent leave Worldspine Wurm in their graveyard so it shuffles back in?
