Taking castles when forming a new faction

So I've managed to form my own kingdom and somehow managed to secure a castle but am running at a loss unless I start a war and keep wiping enemy groups.
I'd really appreciate tips on how to take the next castle. My kingdom only has around 300 troops in parties so we can hold the castle we have but whenever I siege somewhere armies of 700 or more turn up before I can break the walls. How do I overcome this? I have about 200k gold.
