Hello, noob bio student here. Can someone explain to me how the detection of this specific toxin works?

So I've been doing some research about mycotoxins for a while now. I want to test a particular substance that could inhibit a toxin which is produced by a certain fungal species. What I basically wanted to do was to quantify the initial concentration of this toxin in vitro with the species and its final concentration as I subject it to the substance. From there I'd see whether the substance has antitoxin
properties and compare it. Is there any way I can do this?? How can I quantify the initial amount? I saw some test kits online like ELISA although I haven't understood how that works yet.
