Thoughts on growing microgreens without substrate? Particularly larger seeds?

I was watching a few videos about fodder grown hydroponically and it seems it's grown in a matter where the roots tend to curl over and around the seed hulls and was wondering if that would work for things like sunflowers and peas.

I guess what I'm really asking is what do you all think and is that marketable? I'm sure I could do it, but I don't know if it would be better than just growing with really any growing medium.

Sure it would be harder to do with things like onion and chives which have very tiny seeds, but it would be a bit more dense which would make selling it a bit more profitable. Plus, don't have to spend money on medium.
