Any recommended sources that simply explains what agar-agar is and how it forms gels? Something that people who haven't or are still taking biochem can understand

Almost all of my microbiology students haven't taken or are still taking biochem. Some have already taken organic chem, and some have not. We will prepare media soon. I want to explain how agar forms a gel in a way that even students who have the bare minimum organic chem background can understand
