I'm trying to make my first nixitamal, to make tortillas and nachos, but here in my country I couldn't find calcium hydroxide easily, so I opted to use oxide, because it's the same molecule added to water but I'm having some difficulties, I wanted opinions.The corn husk came off easily, I've washed it a few (several) times and I have two main questions:
First: the water keeps coming out "dirty" I'm not sure if it's still lime or if it's starch and I'm washing it uselesslySecond: I tasted the corn, even though I haven't crushed and roasted it yet, and the taste of lime seems very strong, which collaborates with the idea that I need to wash it more often and that it's not actually starch, but as this stronger taste is concentrated inside the corn, I was in doubt if this taste of lime will come out after continuing the preparation.
I also may have leave too much time, 24h and resting for another 48, cause i had no time to wash.
I think I'm really just lost and wanting comfort/advice
