Why is the salsa verde from food trucks and restaurants better than anything I can find in a store?

Seriously? Why is it always better coming out of those little plastic cups than a jar from the grocery store? I swear the stuff at the store isn’t the same stuff you get from food trucks, like there’s two different salsa verdes, the bad stuff in a jar and the perfect stuff from restaurants.
