Redundant Fiber Uplinks

I have a 6 strand fiber running from building A to B. 1 Meraki switch on each side, each have 2 SFP ports. Since I have 3 pairs available and no need for all 3, should I plug 2 of them into each switch for redundant uplinks in case one of the pairs fail? Just curious what is standard when you have more pairs than you can use. Also how do you configure this?
