Need clarification about lean/fat ratio

Hi,

I hope it’s okay to ask this, but I need some help with understanding lean/fat ratio and how it correlates to weight.

Example: Say I want a 1lb burger blend that consists of chuck, brisket, short rib, and navel. I would want this as a 70/30 blend.

Would I ask for 5.5oz of chuck, 5.5oz brisket, 2.5oz short rib, 2.5oz navel - each with a 70/30 lean-to-fat ratio? Would this overall would be a 70/30 ratio of leaner meat vs fattier cut but with the 70/30 meat to fat ratio I want?

Or

Would I ask for 4oz of each cut with a 70/30 lean/fat ratio? Would this would be 50/50 leaner cut vs fattier cut but with the 70/30 ratio?

Sorry if this sounds confusing, not sure how else to word it. Just really want to learn and be educated about this.
