any interesting combos for flavor like I was thinking apple and ginger might be good or apple and mint. just different combos that people have tried and got good results with

so I made a couple super basic meads. I over sweetened on accident and it's finishing at 1.030 started at 1.124 - 12.34% I'm thinking of added preservatives and then add water to bring that gravity down to like 1.020 or 1.010 if possible but I don't want the alcohol level to go down below 10%?
