Thought I made a mistake..turned out to be a happy little accident

Hey guys, I'm a (very) amateur mead maker (brewer?) and just bottled my first 2 batches a couple weeks ago. I made a gallon of traditional honey mead, and a gallon of Joe's Ancient Orange mead. Both with 3½ lbs of honey.

After the 2 month mark, (I started them in late April) they weren't clear or very sweet at all, so I left them to ferment for a bit longer. By then they were very clear, and very smooth. I think I did a bangin' job!

I just wanted to share my success with my first 2 batches, and maybe get some good ideas for a spring time batch. Maybe something light and refreshing, like peach or strawberry or something. Any ideas or input?
