Corking issues

Hey everyone, I've been a long time lurker.. for well a long time haha. I actually started meadering back in May/June. I generally just use the bottles that have the flip tops for most of my creations, however if I view as being really good I might put in a couple 375ml glass limoncello bottles. I've had great success with them at first, however recently I've had 5 of them become howitzers, finding some corks 30ft away. I made a skeeter pee with the butterfly blossoms to make it purple and out of the 3 bottles I made, one survived and the one that did turned out to have become sparkling. The same issue was in my flip top bottles of the same mead.

So my issue is, I pasteurized these meads, I actually do it with every mead that either stops fermenting or I view as being done. I "boil" them in their original fermenter for usually 15 minutes and use a laser thermometer gun thing to see what the internal temperature is, which is usually 160-170 degrees fahrenheit. What do I do? You are my only help!
