Had a few thoughts over the holidays here.
First off was one that my GF and I were cooking up last night. I've never worked with molasses and December seems like as good a time as any.
Roughly thinking molasses, vanilla, rum extract and almond extract in secondary. 1lbs/gal blackberry in primary. I'll probably do a staggered sugar 20% monster, but that's just me. I don't see a reason to lock that one to an abv.
I am insanely happy with how my blueberry orange "hefeweizen" hydromel is shaping up, and would recommend that for a monthly brew, or for a winter drink a mulled mead with cinnamon, anise, clove and a whole lot raisins.
Thoughts?
Also, now that we have 6 months in or so on the challenges it's probably about time to start reviewing the old ones, which I will be linking in the new Challenge posts. I would like to be adding the recipes to the mead recipe wiki tab here if there are some good recipes that floated to the top from the past ones.
