It is called a bunch of things around the web and can be made a hundred different ways. I have spent a lot of time testing out different recipes for making a quick, clean hydromel but have never actually tested different yeasts side-by-side. Generally I use US-05 and US-04 because they are fast, clean, and have a decently high tolerable temperature range for fermentation.
Anyways, the reason I post this is because I just tried out a new yeast and, holy crap, it was amazing. 1.06-1.00 in 3 days, fermented so clean that the mead basically tastes like lightly flavored water. Yeast had flocculated and cleaned itself up so well that I couldn't taste a hint of it. It was nuts.
Now this got me thinking that there are some really good yeasts out there that I have not tried and would like to do a side by side comparison. What are your go-to quick-finishing hydromel yeasts?
