I'm not an expert at all, but I'm on my 8th batch and I've made something I can not figure out if it's bad. Plan was to make a mead that tasted like almond joy. I used cocoa in the primary stage and it struggled with a fowl oder. Gave it nutrient but have been nervous since. Now it's finished at 16% but has a sour flavor. Not exactly a rotten sour flavor but it is in the front of the palette. Is this batch ruined, do I need to let it age longer, or is there something else I'm not aware of to address this?
