I used about 3 lbs of honey initially and a decent amount of lavender bud and blackberries. After around 6 months it was done fermenting. It had a really beautiful color and clarity, however, it came out extremely dry. I went ahead and backsweetened it with another lb of honey and added some blackberry and lavender extract since the flavors were really subtle. The sweetness is perfect now, however, I do miss the color and clarity that I had before. Next time I'd like to add more honey initially to skip the backsweetening phase. But overall I'm happy with these and plan to keep a bottle safe to age for another year or so.
