And I want to make a batch by the end of April to celebrate Hexenacht- Do i have enought time??

I'm using champagne yeast, and some cheap honey from walmart- i figure 2-3 weeks for fermentation and then racking it and bottling it, but i really wanna drink one of my bottles by April 30th, and i want it to be carbonated because I've never had carbonated mead. Taste isn't of any concern for this specific bottle mind you.

Am I dumbass who's gonna shit his pants and his friends pants if we drink mead that early??
