So this is the no water beetroot mead topped up with apple juice one month later. It is looking, and smelling incredible. It is so dark I couldn’t see the lees nor could I see my siphon so I have no idea if I racked in some sediment. I’m going to sweeten with eucalyptus honey.

This may be irrelevant to the success of this mead but my god, I love the color of that foam as it degassed a bit.

2 cups apple juice 2lbs wildflower honey Beetroot juice to one gallon Pectic enzyme Goferm 71B Fermaid O on days 1, 2, and 4 DAP day 2 Racked after one month OG 1.088 FG 0.998
