So my wife and I love a hot OJ with ginger juice and honey in it. I know fermenting orange juice can be problematic, but I had a thought today about a possible mead.
If I aimed for like a 1.140 OG with enough ginger juice to make it fiery and fermented it dry to get the ABV nice and high, then stabilized it before adding equal amount of OJ to the mead with zest and honey in, and possibly more ginger juice to taste, and possibly clove and cinnamon, and then made it hot for drinking.. it would be half the ABV I started with and that would be fine (hopefully somewhere around 9% after the dilution)
Would the orange juice still be problematic? Would I then be in heaven?
