Do post-graduate research assistant positions typically conduct independent projects? What are the differences between research assistants I, II, and III?

I'm a rising junior, and I'm thinking of taking a gap year between graduation and med school and applying for a research assistant position in a lab. As I'm also looking for more research hours on my MD/PhD application, I wonder if those positions allow independent projects, and also I wonder what the key differences between different numbers after the position names. For those who might wonder why I'm not thinking of post-bacc programs like PREPs which guarantee independent projects and , possibly, publication, I'm an international student, and that disqualifies me for most programs, which are mostly NIH-funded.
