Mac pro 5.1 + Samsung 970 EVO Plus 500GB NVMe M.2 not showing up

Hi guys, I have a Mac pro 5.1, sys firmware version 144, macOS 11.1 (using OC), and wanted to install a NVME drive using this adapter (GLOTRENDS PA05-HS M.2 PCIE NVME) after reading successful reviews from people who installed it on a Mac pro: https://www.amazon.ca/gp/product/B07H81VW29/ref=ppx_yo_dt_b_asin_title_o03_s00?ie=UTF8&psc=1
My plan was:
- I install the drive
- I boot into recovery mode
- I go to the disk utility and restore the NVME from my SSD
- Remove the SSD and enjoy NVME super speed.
I'm booting into macOS but cannot see the NVME drive in the disk utility. Am I missing something?
