How to open a game’s launcher after you’ve already started it

I’m using porting kit to play fallout 3 on my MacBook Pro, I got the game from GOG. It works pretty good so far but it has like this little stutter/slow effect when you move, I’m not sure if it’s cause I’m using controller or cause of how I set up the setting when I first used the launcher screen (the one that shows up before you start)

I wanna try and change some settings around on the launcher but I don’t know how to open it, any time I click on the application it goes straight into the game with no launcher. I even deleted and reinstalled the game but got the same ting. Does anyone know how to start the launcher or fix this?
