A couple questions about using multiple 144hz monitors on M1 Pro 14-inch MacBook Pro

Hi, I've been a windows user for basically my entire life and I'm considering switching to MacBook as an upgrade for my music production setup sometime in the future. My current setup consists of an ultrawide 3440x1440 monitor and a 1920x1080 monitor (both 144hz) and I have a few questions regarding them:

  1. Is the M1 Pro MacBook Pro capable of running its own screen at 120hz and both external monitors at 144hz? The general consensus I gathered was that it is possible but even after asking an Apple employee it's still pretty vague for me so I thought I'd ask just in case. (since its a music production setup I don't think it'd have that much of an impact on performance)
  2. If it is possible, can they both run on a single Thunderbolt port using a dongle with two Thunderbolt to DisplayPort adapters plugged into it? No biggie if it can't but I like the idea of only having to plug/unplug one cable if I'm out and about.
  3. In a couple YouTube videos I watched some people said that macOS text is blurry on lower resolution/lower dpi external monitors compared to Windows. Is this actually an issue? If it is then is there a solution to it? Would like some feedback as I've checked various sources and don't really have a clear answer yet.
