Help: Macbook Air Sidecar issues

I have my Macbook Air (2020) hooked up with two external displays via a DisplayPort hub and I also use my iPad Pro (2018) as a sidecar monitor. I will be using all of them seamlessly, and every so often the Sidecar goes from extending the display to all of a sudden mirroring one of my displays and I lose the windows on it.

I've updated the software on both my Macbook and the iPad with no changes. I also reset the network settings on the iPad, force restarted the iPad and Macbook, and no changes. I also have the "Mirror Display" option under Display preferences turned off.

Has anyone else had this issue and can help?
