How to disable SIP to install Catalina on MacPro 5,1

I'm trying to install Catalina on a MacPro 5,1. The "final" step is to disable SIP.

My MacPro: 5,1 early 2012, 2x2.4 Xeon/64DDR3/Radeon RX560

I cannot access recovery mode to disable SIP. Tried CMD R/CMD OPT R/Make a bootable USB install and boot from it (doesn't work, can't access the boot menu by holding OPT when booting the computer). Also tried reseting SMC & PRAM.

Is it possible that the boot selection menu is not displayed because of my graphic card?
