im cooking beef kidney. Any advice?

My plan is to cut it thin, soak it in water with vinegar, then fry it in oil, and then steam it for a couple minutes. I want to get the cooking time to between 4 and 8 minutes.
update:
It turned out great. Seems like kidney is very similar to liver. Cooking it fast and hot prevents it from going hard.
