In Jackson's RotK, it's daytime when Pippin lights the beacon at Minas Tirith. Part of the glorious sequence that follows includes a pair of beacons above the clouds being ignited under starlight. When Aragorn spots the beacon from Edoras it's daytime again.
So like, what do we know from the lore about this? Do we have the number of beacons or their trail on a map? What's the time difference in the books? It feels... off, to me, that it would take overnight for a distance Shadowfax covers in 3 days, but also what do I know?
