How to calorie count a casserole?

Hi - what a great and supportive sub! I'm new to calorie counting, have only been doing it for 11 days and bought a food scale. On top of any general advice you have, I'm also curious how I should tackle calorie counting things like zucchini casserole or other blended dishes I might make, if that makes sense? Trying to be as accurate as possible so I don't go over and any thoughts would be lovely. Thanks in advance!

About Me: 34F, 5'5", CW: 175 lbs. I don't have a goal weight, I just want to comfortably fit into a US 8 or 10 zip-up dress. I'm flirting with US 14 because I've been an utter bum during the lockdown. I'm trying to do 1,500 calories or less a day and slowly incorporating daily exercise into the mix with the hope of reaching my goal by next summer.
