Amateur chef's: favourite healthy recipes?

Hello all, coming up to weigh in on the week 7 mark tomorrow and have been losing fairly steadily. I've really taken to the cooking aspect of the whole weight loss thing, switching out my homemade spaghetti bolognese and chillies (which in my own humble opinion are fucking great and ill fight anyone here) for a homemade chicken salads and the like. I'm wondering if anyone has taken to cooking healthy and has any favourite recipes to share.

My addition would be chicken a la snake salad: skinless chicken breast (usually roasted with salt, pepper, and recently paprika, cumin and a little salsa) with a red onion, a pre made bag of salad (I think it's a spinnach and rocket one with some others thrown in) with a table spoon of mayo. Mashed all together and usually lasting me about 4 days worth of dinners with three chicken breasts. I've also managed to get some fairly nice fajitas going without too many calories.
