My nearly "all you can eat" veggie stew

While not a new recipe, I figured I would share for those out there who maybe haven't tried it. Basically it is a veggie stew that has healthy nutrients with minimal calories. I have a savory tooth and this hits the spot. I'll eat it between meals, when I am hungry and it satisfies me and helps me do better portion wise on the next main meal.

While not truly "all you can eat", the calorie intake is fairly minimal.

I have cobbled my recipe and you will want to make yours to taste:

1- large head of brocolli 1- head of cauliflower 1- package of mushrooms 1- package of small carrots 1- head of cabbage 1- celery 1- large can of low sodium or unsalted diced tomato (check brands for sugar/calories-- some are better than others). 1- low sodium or unsalted veggie or chicken stalk.

Optional (a half cup of brown rice or barley to make it even more substantial).

garlic, black pepper, a little sea salt.

Basically cut all veggies into small bite size pieces and throw everything into a large stock pot. Bring to boil then simmer on low until everything is super tender and has melded into the consistency of a stew.

Tips: I don't like mine soupy so just add enough water and/or stock to let it cook. Also, sodium is something you'll want to watch to avoid water retention. Fresh vegetables can be expensive and more time consuming to clean and cut and I have found that getting a large bag of frozen mixed veggies at the grocery store works nearly as good.
