Going over then under then over... your calories?

So I was wondering.
Is it OK, for example, to prepare for tomorrow, on which you know you'll have to go over your calories, by eating less today and the day after tomorrow? In this example, you still count calories, and your usual limit is 1200 calories, and you end up with: Day1. 1000 calories, Day2. 1600 calories, Day3. 1000 calories. I guess it's good calorie-wise, but if you do this often, isn't it somehow bad?
What if I'm not really hungry one day and stay way under my calories? Should I force myself to eat? Can I eat more the next day instead?
