Catered eggplant Parmesan recipe

Why is Long Island eggplant Parmesan - the kind you get at a wedding or a block party in the big metal tray A) so delicious and B) so consistent! Even when I get the italian grocery heat and eat it’s the same. The sauce looks pretty simple. Is it just unseasoned bread crumbs and simple marinara so it’s always the same flavor? HOW.
