Old machine for media storage and backups

I've got an old i7 2600 machine laying around and was considering using it to store my media collection on and back up some old music to FLAC format. I'll probably add a whole bunch of mechanical drives too, but wanted to know if using Linux over Windows makes any sense for this task?

I will be bringing media over from NTFS formatting drives and probably be using EXT4, unless someone suggests overwise. Also any suggestions on ripping to FLAC and if I wanted to use the box to also play music, how is the audiophile scene here?
