[UT, USA] Landlord refusing to refund overpaid rent

I contacted my last landlord recently about having overpaid on my lease. He denied there being any error and told me I wasn't getting anything. Apparently this has happened in the past, and when I said that he legally owed me the money, he said "no I don't, and a judge will agree with me on that." That didn't sound right to me. Should I have an attorney send a demand letter for the overpayment to be refunded? Can I send a demand letter myself? If so, should I get it notarized? Should I take this to small claims court? Sorry to throw a million questions out there, this has me kind of stressed out. I can prove that I've overpaid, but if I can avoid taking it to court, I'd like to. If it's what I have to do, so be it.
