Washington State - Middle school "lunch helpers" forced to miss class to help prepare lunch

So when I was in middle school specific teachers would get assigned to pick students to go help the lunch lady's prepare and serve lunch. They'd always have a group of three teachers that taught all the kids in one grade(one teacher had all the 6th graders at some point, one teacher had all the seventh graders etc.). Every student had to do one week of it. Students would get pulled out of class 20 minutes early to help prepare lunch. We would have about 5 minutes to eat before we had to serve other students lunch. We got a free school lunch (usually 2 dollars) but lots of people had dietary restrictions that weren't met. I'm only asking because me and other people in my classes got incredibly behind because of this. Was this legal?
