Minor fender bender

I backed into a car in a parking lot. Contacted the other party and we agreed they would get a quote and I would pay them the cost of the repairs and not have to get insurance involved. For the record repairs are under 600 bucks. I don't care if they fix it or pocket the cash as it was an older car.
Is there a general release of liability I can get offline I should have them sign at the time of payment? If I create my own what all should it include? I just don't want to pay them and then have them try and file an insurance claim or anything later on.
