We cut down trees on our property, now the neighbor wants to sue

Hey there, just wanting some legal advice! We live in texas and we are in the process of turning an acreage residential property into a business and by city ordinance we’ll need to put up a wall or plant trees and shrubbery to the boundaries touching neighbors that are residential. (The wall is required if the majority neighbors do not wish for shrubbery/ trees.) Anywho, we decided to take a head start by removing the crappy half dead trees from the back of the property. Well during the process, the neighbors decided to come out screaming and shouting that we had no right to cut down (their trees) i called the cops, showed them the property survey and they said go right ahead. The neighbors then tried to sue for hundreds of thousands for (loss of energy efficiency to their home, emotional damages, etc etc. we asked for their proof that the trees belonged to them and they provided no proof, now the lawyers want to get a mediator to settle, but now they want $30,000 for god knows what. We’ve been paying our lawyer out of pocket and all of this is delaying our business from proceeding because we’re putting funds into the lawsuit instead of the start up of our business. Any idea where to go? New lawyer? Go to trial? This guy has a restraining order against him from us for openly threatening us on social media as well as has been throwing beer bottles and cans into our yard from his fence line ever since. (The threat came pre tree removal for walking along the fence line one day to observe the boundary stakes placed by the surveyor.)
