Companies hiding arbitration agreements in employee handbooks. Enforceable?

There were a number of lawsuit a few years back where a company got a large number of plaintiffs’ cases dismissed. During these cases the company stated that they had arbitration agreements with each person. The plaintiffs had no knowledge of it. Turns out the when they acknowledged the employee handbook online they also agreed to the contract.
My assumption was that an arbitration agreement was subject to contract laws; it could not be placed in the employee handbook like fine print. If an employer never stated an agreement was in the handbook; then wouldn’t that be deception on there part? How did the courts look at the case and say the plaintiffs made a conscious decision to enter the agreement?
