Good resources to learn how to fit/train a model - improve learning curves

I'm trying to train a model by analyzing train and val loss curves. However, I am getting crazy by the number of things i can change and how i can never get a good learning curve.

Are there any resources on how to build a model from scratch? i.e. how to better understand the curves? what to change first?
