ELI5: Why does it matter if you don't lose MMR?

People are always saying that one of the benefits of dodging a game vs playing it and losing are that you only lose LP, not MMR. Why does this matter? Don't you want your MMR to go down "artificially" so that you can play against easier opponents and therefore win more?
