How do pros go on about picks and bans in the drafting phase?

I'm starting to watch LoL comp scene and I can't figure out how the pros are going on about their picks and bans. I know that the picks are usually a 1-1-2-jungle. But, what are the thought processes behind their bans? are they just banning out the slightly more OP champ than others? Or banning out some of the player's signature champs?
