[Zone 7B] New lawn started and grass has filled in about 1/5... Once filled in, is my job over?

I started a new lawn w/ peat moss and Pennington Smart Seed Sun & Shade in Raleigh, NC. According to the seed bag label, it's a mix of Tall Fescue, Perennial Ryegrass, Kentucky Bluegrass and Fine Fescue. I've watered once a day, (almost) every day since planting on October 22nd.

Since this is a new "lawn", once the grass has filled in the rest of the backyard, what major maintenance task do I need to do? Especially considering that the southern winter will be here soon? I'm worried that I will miss a major task and the grass will die before it's had a chance make a home back there.
