Is a stealth build actually viable/fun ?

Hello guys !

I already finished the game two times but third time's the charm like they said. So I was going to do like always, a classic knight, but asked myself if it was actually possible to do a stealth character ? I mean for some part of the game I guess it will be hard to play like that but for the rest and a large portion of side quests, it should be ok, but is it fun ?

I haven't tried much on that side of things, but I remember some questionnable game design choice (like not being able to knock everyone, as they can escape your grasp) but I don't know much. Have you tried ?
