Ingredients (1 serving):
200g courgettes
40g baby button mushrooms
40g cooked ham
50ml double cream
1/2 clove of garlic
1tbs olive oil
1tbs black truffle oil
Black truffle shavings
Thinly shave your courgettes, then proceed to slice them spaghetti-like. Dry-fry them in a pan for 10 minutes on a high setting, getting rid of the water that comes out of them as you keep stirring. Once they start browning, set aside.
In a pan, heat up the olive oil, adding the half clove of garlic (minced), mushrooms and ham all at the same time. Fry the ingredients for five minutes at a medium setting. Then incorporate the truffle oil and the cream, turning the flame up to a high setting for a couple of minutes (or until the sauce thickens up). Once the sauce is ready, drop the courgettes in the pan and stir for half a minute. Serve and garnish with black truffle shavings.
