I managed to score a couple of ducks from a co-worker, but they skinned them instead of plucking. Everything I read online and have found talks about the skin and glorious fat, so now I'm with out that. What can I do with them? Can I roast them and just slather them with butter to keep them moist? Do I need to cut them up? Help!
