We managed to get a 4 lb bag of coconut flour from Costco for $8~, so that means I'll be baking with coconut flour for quite a while.
So here's my recipe!
Coconut flour ½ cup
truvia brown sugar 2 tbsp 2 tsp
¼ tsp salt
¼ baking soda
3 large eggs
½ c unsalted butter, softened
1 tsp vanilla extract
½ bar Lily's original dark chocolate, chopped
Preheat the oven to 350 F, grease a cookie sheet. Mix all your dry ingredients together (except the chocolate), when dry ingredients are combined mix in all your wet ingredients and mix until a light batter is formed. Finally, fold in your chopped chocolate. Roll the dough into 12 balls, and press lightly. Bake for 12-14 minutes until the bottoms are brown. Cool cookies for 5-10 minutes before eating.
These are really easy and delicious, though I suggest having a drink near by as coconut flour can dry your mouth out. I ran the macros and these come to 2 net carbs each when you make 12 cookies. Here is the nutrition information. Enjoy!
