How does jewelry appraisal work?

Long story short, my engagement fell thru and I need this ring gone ASAP.
It's lab grown, 2.5ct oval cut diamond stone in a Tiffany setting. I paid $3,400 for it, but it appraised for a little over $7,000.
When looking to sell, do you think I'll at least get my money back on it? Would be nice to get about 4k for it, but if I could get what I paid for it back I'd be happy with that.
Can someone offer some clarity please?
